This time, we chose eggplant and experimented with a marinated “steak” recipe that I usually cook on the stovetop during summer. The result? With so many ways to prepare it—from grilled eggplant steaks to musakka and even crispy eggplant parmesan—it’s clear that even one vegetable can offer countless delicious possibilities.
Here are three of my favorite vegan eggplant recipes.
1. Vegan Eggplant ‘Steak’ (Serves 2)

Ingredients:
• 1 large eggplant
• 2 tbsp soy sauce
• 2 tbsp olive oil
• 1 tbsp balsamic vinegar
• 1 tsp garlic powder
• 1 tsp sweet paprika
• Freshly cracked black pepper
Instructions:
1. Cut the eggplant into 1 cm thick slices.
2. In a bowl, mix soy sauce, olive oil, balsamic vinegar, garlic powder, and sweet paprika to create a marinade.
3. Let the eggplant slices marinate for at least 30 minutes. If you’re short on time, coat them well in the marinade and grill or pan-fry until golden on both sides.

2. Baked Spiced Soy Mince Vegan Moussaka

Ingredients:
• 2 eggplants, thinly sliced
• 1 cup soy mince (soaked)
• 1 onion, chopped
• 2 garlic cloves, minced
• 1 tomato, diced
• 1 tbsp tomato paste
• Salt, pepper, cumin, oregano
• Olive oil
Instructions:
1. Salt the eggplant slices and let them rest to remove bitterness, then rinse and dry them.
2. Sauté onions and garlic, add soy mince, and cook for a few minutes. Add tomatoes, tomato paste, and spices, cooking until the mixture thickens.
3. Layer the eggplant and soy mince mixture in a baking dish.
4. Bake at 180°C for 30 minutes.
3. Vegan Eggplant Parmesan (Serves 3)

Ingredients:
• 2 medium eggplants, sliced
• 2 cups vegan breadcrumbs
• 1 tbsp Italian seasoning
• 1/2 cup plant-based milk
• 1 cup flour
• Vegan parmesan (store-bought or homemade)
• 2 cups marinara sauce
• Vegan mozzarella (optional)
• Fresh basil for garnish
Instructions:
1. Salt the eggplant slices and let them release their juices. Rinse and dry thoroughly.
2. Prepare three separate bowls for flour, plant-based milk, and seasoned breadcrumbs.
3. Dredge each eggplant slice in flour, dip in milk, and coat in breadcrumbs.
4. Bake the eggplant slices at 200°C until crispy, about 25-30 minutes.
5. In a baking dish, layer marinara sauce, eggplant slices, and vegan parmesan. Repeat the layers, adding vegan mozzarella on top if desired.
6. Bake for another 20 minutes at 180°C until golden and bubbly. Garnish with fresh basil.
